THE STORY BEHIND THE GRAIN
Wasmania, the Little Fire Ant, who makes his way through the plantation. This red ant is so feared because it possesses the underestimated power of the very small and is undeterred by anything.
We easily forget it, we only see it with sustained attention, but its bite reminds us of the harsh reality of its presence!
Finca Renacer is preparing 4 hectares to plant its 16,000 Catuaï Rojo plants in the nursery.
Genetic cross between two natural Arabica mutations, Caturra Yellow and Mundo Novo, producing yellow and red fruit types.
Its small stature allows it to be planted densely and harvested more efficiently; it can be planted at nearly double the density.
It is no longer new to the market but is valued for its high yield, reliable quality and potential profit for the grower.
Catuai's biggest problem is its poor resistance to rust, fungal infections, and pests. It also has high nutritional requirements during growth, meaning it requires additional investment and maintenance from the grower as it matures.
Catuai is known for having a fruity and complex flavor profile that does well at high altitudes. Its primary descriptor in aroma and flavor is citrus, and there is no discernible difference in taste between the two Catuai.
Catuai can have a bitter taste with a high level of acidity. However, when properly grown and processed, Catuai can make a great cup of coffee, even when dark roasted (dark roast), and imparts a fruity and grassy aftertaste. It aims to add body to the coffee and create a unique profile.
